Preparation

Start preparing malai kofta by mashing the potatoes, vegetables, paneer and cream cooked in a large bowl. Add the kofta spices to this mixture and knead all the ingredients well to obtain a firm dough. Season this dough with salt.
Prepare small dumplings with this paste and put ½ tablespoon nuts and raisins in each of these dumplings. Then roll them in perfect rounds.
Fry these balls in a pale golden color over medium heat.
Drain the excess oil from these balls by placing them on paper towels and set them aside.
To prepare the malai (sauce), start frying the onions in a deep saucepan until you get a light brown color.
Prepare a dough with the pieces of tomato, garlic, ginger, coriander, cumin and red chili powder.
Place this batter in the pan and continue to fry until the oil and masala separate.
Then add walnut paste and poppy powder and fry for another 2 to 3 minutes.
Then add warm water to make a thick sauce and mix well. Add salt to taste.
Boil the sauce slowly and simmer.
In this sauce over low heat, add the kofta balls carefully and cook uncovered for about 2 to 3 minutes.
Turn off the heat, sprinkle with garam masala and cover for about five minutes.
Malai Kofta, subtly sweet, is particularly appreciated by gourmets and children.
